Actually, come to notice it now, the 360 looks a bit more detailed just because of the shadowing. The PS3 almost makes Assassin's Creed look like it is being played in a VHS-format...
How can I be biased when the images of the two almost look the same. It's been a while since I've been picky with the graphics of games... and that is mainly because I am so much more interested in the gameplay, rather than the power behind the console, but anyhow... The X-Box 360 tends to look more enhanced like a DVD, but the PS3 looks more like real life which means good lighting, but rather bland graphics. The 360 has lush shadowing while the PS3 adds a bit more brightness against contrast. The 360 is pretty much the direct opposite. There's nothing to really be picky about here, in my opinion. Just enjoy the game. My 360 is broken, and my brother's PS3 is broken... so, really, please enjoy the games while you still can.
I'm going to have to agree with BlasterXL until I try the H3 Beta myself. I'm about to get my hands on it. From the screenshots, Crysis definitely looks better. H3 could probably tie with Oblivion for now.
